Asparagus Tips Oriental

2 lbs asparagus, trimmed
2 tblsp sesame oil
1 tblsp soy sauce
1 tblsp sesame seeds, toasted
1/4 cup cashews, toasted
1 scallion, sliced diagonally

1. Cut up asparagus into 2 inch pieces.

2. Heat the sesame oil in a wok until quite hot. Add the asparagus and cook, over medium heat, tossing often for 3 minutes. Add the soy sauce, sesame seeds and cashews. Cook over medium-high heat another 2 minutes. Garnish with the scallion and serve immediately.

Asparagus is best eaten as fresh as possible. Check stalk and tip for freshness.
